Does anyone know any good tips, tricks, or recipes for cooking pig heads?

Tip: Don't do it.
Have butcher split the head. Typically it would be "cleaned" by boiling it in water, drain and rinse, reboil, skimming "foam" (scum) from surface. Flesh can be used in making force-meat or sausage, stews with other end parts (ears, feet, tails) or served as boiled meats with a pungent sauce (horseradish). Can also be spiced, oiled and baked after cleaning.

Sounds disgusting indeed. I love me some headcheese no matter what it sounds like.
Umm, BS you may wish to no longer partake of any form of sausage, including hot dogs, if those ingredients make you quesy.

I remember watching my grandmother preparing head cheese....my uncle would carry a hog's head into the large kitchen sink, and gramma would do everything else.

I was sent to Turkey in 1998 by the company I work for. While I was being driven around in the abject poverty of Gazentep, my driver pulled over to a little roadside, open air, "restaurant", and proceded to try and get me to to try a soup that was boiling in a large cauldron. I looked in and a pigs head was bobbin around in there. "No thanks", I said.
That was one CRAAAAAAZY week.

Pig head in Muslim Turkey? Crazy indeed. You know what? You're right. It was a goats head. My bad. I'll have to re-tell that story in a future goat head thread.

Put a little black bag over it's head.

Cover it? I am more tempted to draw a Frito Bandito mustache on it!

Put a little black bag over it's head. Are you one of the cooks at Gitmo?

BTW - the head turned out rather delicious. Most of what was there was skin and fat, but once separated the meat was very good. Of course that skin & fat got boiled to make stock. I can't say I'll rush out and get another, but then again this probably won't be the last pig head I cook.

One can make biscuits out of cat heads?!? Hey KC - how many cats are hanging out at your house these days?

You could have used dog-eared napkins.
