an alternate to sweet potato casserole.
BAKED CARROTS 2 c. cooked, mashed, carrots (8-10) 3/4 c. sugar (I used splenda) 3 tbsp. flour 1 tsp. baking powder 1 stick butter, melted 3 eggs, beaten Cinnamon on top
Cut and cook carrots. Mash. Mix everything together but cinnamon. Put in greased casserole, put on cinnamon. Bake at 400 degrees for 10 minutes, then 350 degrees for 40 minutes.

I've been eating "baked apples" forever. funny how many people didn't know how easy they are.
core and peel the top inch or so of an apple. (don't punch all the way through when coring it) put about a tablespoon of butter/margarine/whatever you have in the hole.
add sugar (I use splenda) and cinnamon make it dark with the cinnamon.
put it in a bowl and microwave it for three minutes.
if you put a big spoon of vanilla ice cream on it its better but good without.

I love baked apples. I always use brown sugar or REAL maple syrup, though.

Darlin, Syracuse is a long way from NYC. Now, I'm a Jersey girl by birth. I can get away with "youse tawkin ta me" but about 6 yrs near Rochester means I can also call my home a hoos. Then again, after being in the south for right about 30yrs, I guess I'm just a damn yankee.

The herb crusted tilapia at sams (frozen fish) is really good and easy to fix. Some kind of potato dish (or rice) and open a can of something green and dinner is complete [grin]

Had a lovely mushroom risotto and big salad last night. Tonight, chili (ground pork, beef and chorizo, three kinds of beans, chipotle).

We had home made biscuits, bacon, gravy and sliced tomatoes for dinner....perfect for a gloomy evening. Home made blueberry jam on some biscuits for dessert topped it off nicely.

Tonight we had Costa Rican Black Beans and Butter Honey Plantains. I substituted chicken broth for vegetable and didn't use honey served it with white rice. (like the photo) ** from foodgawker.com **
