Cooked up a "mess" of collards from scratch today. Added only a can of Swanson's vegetable broth to flavor. I'm convinced that it is pretty near impossible to overcook collards. I don't like them totally limp, but even after 2 hours, I was okay leaving the flame on a little longer. The biggest pain was removing the stems and the tougher veins. I expect to either enrich my Vitamin A and iron levels, or benefit from the New Year's superstition about "eating greens to make the year greener." And a can of black-eyed peas for luck.

I love banana bread! Zuchini bread, too.
I will have chicken & carrots broiled in the crock pot and covered with Italian Dressing. Chopped rosemary & garlic potatoes broasted in the oven to accompany the chicken.

Yeah... when my son (who is now potty trained) stays with my mom she would let him eat endless amounts of Craisons out of the bag... No harm I guess... but not terribly healthy when they pass right through either. I changed a few of those diapers. Wish I had pics for you guys... sorry
