Anyone got some good gluten free ideas for fixing up some cod filets?
(Gluten free means no breading, flour, etc)

Cod Smoothie - One Cod Fillet
- One cup of yogurt
- One banana
- 1/4 cup strawberries
- One Cup of Ice
- 1/4 cup of honey
Add cod fillet, yogurt, banana, strawberries and honey to a blender. Blend until smooth. Add ice and continue blending until ice is crushed and blended in nicely with the other mixture. Makes two servings.

Bake it, WK. Put it on a cookie sheet with olive oil and lemon juice. Throw some fresh rosemary on top of it and just bake it at 350 until flaky. It doesn't take long. For those who didn't get it the smoothy recipe is just a basic smoothy recipe with the Cod added as an ingredient. If you try it let me know how it turns out. I'm not drinking it.

The cod lightly sauteed with cooking spray/olive oil and lightly peppered. Sprinkle a bit of basil and thyme along with a few crushed almonds (if you want to add a little protein). After putting it on your plate, spritz with some fresh lemon. Serve with steamed green beans and a wedge of mild cheddar cheese on the side.

As a gluten-free cook, I can recommend breading fish or chicken using a combination of gluten-free flours (rice, potato starch and tapioca starch), crushed Perky's Rice Cereal (found at Greenlife) or even instant mashed potato flakes. The potato flakes really work well-I also use them in meatloaf and to thicken soups.

Cod is firm enough to be sauteed, baked, grilled or even steamed. The flavor combinations are endless. Italian; sauteed in olive oil with a sprinkling of Italian herbs served with a pasta pesto and veg. Mexican; baked or sauteed after a short marinade in Tequila, lime juice and onion then sprinkled with chile powder served with rice and beans. Asian: steamed in a dish with Mirin, soy sauce, green onions and maybe a dab of Schriacha hot sauce served with white rice and stir fried veggies. Just a few off the cuff ideas, go nuts.

It works well to bread and bake fish, chicken, etc-one of the glutinous things my kids really missed was chicken nuggets/fingers, so we use GF breading and bake them.
