So why do hard food like cookies get soft when they go stale but soft foods like bread get hard? How do they know?

That's an interesting point you bring up... Though it mostly seems to go one way to me (soft foods get hard, hard foods just get crumbly & gross)... My cookies are usually soft and turn hard so I guess you must mean something like Chips Ahoy or a different type of cookie.
