As is my tradition (when I can), I fix a home-cooked meal every Sunday. Sometimes it is quite elaborate, other times fairly basic.
This week I made barbecue baked chicken, stir-fried veggies and steamed wild rice.
Marinated a large chicken breast filet and two thigh filets in a bourbon/barbecue sauce mix overnight. Then baked it at 350 degrees for about 40 minutes (it was a large breast).
Stir-fried a mix of Italian-style green beans, sliced carrots, baby corn sobs, water chestnuts and red peppers and served with a side of steamed wild rice (we have a rice steamer).
A fairly simple meal, easy to prepare, and quite tasty.
