I asked for a pressure cooker for Fathers day because I got tired of wasting so many peppers and veggies from my garden every year.
Well, since Sunday I have made a fantastic Blackberry jelly for my morning PB and J. Also, I made a pot roast with carrots and potatoes that turned out better than any roast I have made before, AND IT ONLY TOOK 45 MINUTES!
I had pot roast for dinner Sunday, lunch Monday, and just polished off another bowl full today.
I'm loving it!

Soups, stews, Indian daals, Chinese congee, canning, as you've found out.

My Momma made greens beans ham and potatoes in ours delicious still remember that sound.

Mrs. Bear whips up great pot roasts, stews, corned beef and many other treats in the good old pressure cooker. The new electric one is cool, but using the old stovetop one was always exciting.

Mine is a stove top unit. I don't see any danger as long as you always check to see that the vent pipe is open. Then when you block it with the weight to create pressure, there is an overpressure release if needed. It seems foolproof. Just make sure the pressure goes down before removing the lid.
I think pork chops are in order tonight.

Last night, Pork Chops and Carrots for 10 minutes, then de-pressurized and added corn on the cob and pressure cooked it all for 5 more minutes. It was fantastic!

Pressure canning is an excellent past time to be involved with. More people should do so.

Wrote a long reply LR and then deleted it when I reread and realized you were just talking about canning. I haven't done a whole lot yet, but certainly plan to.
Meanwhile, the meals are amazing, fast, and energy efficient. Also much healthier than conventional cooking.

I remember, from years ago, the loud "fssst-fssst'-fssst-fsssssst", then a louder "pop", and another hole in the ceiling. Didn't work for me.
