We've had some peaches ripening since Market last Sunday. Today we were out and found some relatively inexpensive blueberries and some great looking rhubarb.So, in just a few minutes out of the oven will appear a cobbler with the above flavored with cinnamon and sweetened (lightly) with Splenda. The topping is made with rolled oats with the addition of chopped pecans. There's a good chance this might be our appetizer.

I've got some blackberries I purchased at a produce stand today. Tomorrow I'm going to make a Splenda cobbler!

How well does Splenda work and does it work in any recipe? I'm not opposed to using it, I just didn't know if it would work well.

Firstly the cobbler was awesome, served with a scoop of vanilla ice cream sweetened with Splenda of course. Splenda, or it's less expensive clones which we use, works quite well in recipes like this. We find that Splenda is sweeter than sugar and use 30% to 50% less of it. Again, sweetening is a matter of taste and we would rather taste the fruit than the sweetening agent, your tastes may be different. Mrs. Bear just checked in with the info that what we use is Equate, which is Wally World's Splenda clone. Some people will notice the taste of it, I do, but it's not nearly as obnoxious as some of the older artificial sweeteners. I suggest that you do some research about using it in cooking to avert any minor disasters. It does not work the same as sugar in baking and there are a few other considerations.
