I made Rosemary Salmon tonight. I hadn't made it in a few months and I thought I'd change the sides up just a little. I also made garlic mashed potatoes using roasted garlic and asparagus in butter. The wine was a cheap riesling and desert was key lime pie and coffee. I always like the salmon but something seemed missing from the sides and I think it was the asparagus. Does anyone have a suggestion for serving asparagus in the above menu?

Throw it away....I HATE asparagus.
Why not try some quickly seared mixed veggies (in a touch of butter) with a hint of rosemary thrown in to compliment the salmon? Maybe zuchinni squash, green beans, carrots with a little green and red pepper and a dash of onion for texture?

That might work and I'll give it a try but I do like asparagus. This just needed more than butter with it.

Justin, I love asparagus. Even "fresh" out of the can.
I'd try a beurre blanc for the asparagus with your salmon and garlic mashed potatoes.

Hate asparagus.
Have you tried experimenting with rice? Infusing various flavors? (not the boxed stuff unless you are being really lazy)

I'll replace the potatoes with rice sometime but right now I'm more interested in giving the asparagus a little zing. I'll try the beurre blanc next time with the asparagus.
Rice is something I use fairly often. I actually prepare rice more often than potatoes.

I've been trying to use rice more than potatoes when it comes to fish parings. Can't help ya on the asparagus... as I think the best place for those things is the garbage disposal. ;-)
I used broccoli the other night with salmon. Excellent. Seasoned with lemon juice actually.
