Simple and traditional.
2 lbs russet potatoes, peeled and cubed 1 large head of garlic 4 Tbsp butter 1/2 cup milk 1 tsp salt 1tsp pepper
Wrap head of garlic in aluminum foil and roast in 450° oven for 30 minutes. While garlic is roasting n a 6qt pot bring 2qt water to a boil. Add potatoes and boil for 15 minutes. After boiling the potatoes drain and add salt, pepper and butter to pot. stir until butter is melted then add milk. Begin mashing the potatoes and squeeze roasted garlic into the pot as you are mashing the potatoes. I use an electric hand mixer for this. Continue mashing until smooth.

And I'll start with one of my favorites that I learned from shooting a holiday cooking show years ago for WTCI.
Garlic Mashed Potatoes
5 lb unpeeled red potatoes 2 sticks (8 oz) butter 1/4 cup chopped garlic 2 teaspoons salt 1 lb sour cream
Bring a large pot of salted water to a boil. Add the unpeeled potatoes and cook until tender but still firm, about 45 minutes; drain.
In a sauté pan, melt the butter over medium to high heat and add in the chopped garlic to the heated mixture until the garlic is nicely browned.
Combine the garlic butter, salt and sour cream with the potatoes and mash with a potato masher or with an electric mixer.

Light up burner. Drink a beer. When oil gets to 375 - drop in turkey. Drink a beer. Cook for about 45 minutes at 350.

Remind me not to eat Poole's potatoes... sour cream, yuck...
Two pounds pole beans Half pound bacon Salt to taste
Snap and de-string pole beans Cover with water in large pot (plus another inch or so of water), bring to boil Fry bacon to just short of crispy. Tear into two inch pieces, add to beans. Add salt to taste.
After boiling for about 5 minutes, reduce heat to simmer for about 4 hours minimum. Overnight is preferable. Check water occasionally, refill if low.

Here are two that are always on our table:
Cranberry Jello Mold
(1) 6 oz pkg strawberry jello 2 cups boiling water (1) 16 oz can whole cranberry sauce 1 cup applesauce 1/2 cup port wine OR cranberry juice 1/4 cup chopped pecans (if desired)
Dissolve all ingredients except the nuts. Chill until partially set. Fold in nuts and chill in mold overnight.
Sweet Potato Fluff
2 cups sweet potatoes (4 large mashed) 1/2 cup melted margarine 1 1/4 cups sugar 3 eggs 1 small can evaporated milk juice of one orange 1 small can Angel Flake coconut 1 1/2 cups mini marshmallows (reserve a few for the top)
Beat potatoes, margarine, sugar, eggs, milk and juice until fluffy. Add remaining ingredients and mix well. Pour into lightly greased casserole dish and bake for 45 minutes at 350 degrees. Remove from oven and place reserved marshmallows on top. Bake a few more minutes until marshmallows start to brown.

Here's another one - our family version of Waldorf Salad
1 lb chopped walnuts 1 Red Delicious apple 1 Granny Smith apple 1 large bunch of green grapes 1 large bunch of red or purple grapes 3 long stalks of celery Mayonnaise
To prepare: core and slice the apples into small chunks, chop the celery into small bite-size pieces, and slice each grape in half. Combine all the igrediants into a large bowl and mix with enough mayonnaise to coat everything (this varies on individual taste - I tend to work with less than others).
You can add a layer of miniature marshmallows to the top if you like, making it more of a desert than a side dish.
It's easy to make, tastes delicious, and adds a nice fruit touch to any holiday meal.

I always have to make Squash Casserole (like my grandmother used to make) and roasted red potatoes.

i always make for my grandkids the hormel cure 81 boneless ham basted several times during backing with coca cola and pancake syrup. they love it . they also love this dip. 2 cups hellmans mayo 2 cups any shredded cheese ( use the pizza mix one) mix put in glass baking dish for 30 minutes 350 degrees serve with ritz crackers
